These peppers are generally similar to the "bell" type, but have distinctive shape and flavor. Fruit is up to 3 inches long and 2 to 2.5 inches at the shoulder, generally heart shaped. This type is used for canning, harvested when deep red in color. For canning, the peel, seeds and placenta are removed, so only the interior flesh walls are utilized.
Production in U. S.: No separate data, included in total bell type of 200,000 tons.
Use: Mostly commercially canned.
Part of fruit consumed: Thick walls, after surface peel, seeds and placenta removed.
